Holiday Treat: Aunty Judy’s Pumpkin Crunch

Aunty Judy’s Pumpkin Crunch has been a must-have at every Thanksgiving and Christmas celebration since I was a kid, even popping up for the occasional fall birthday.

With its creamy pumpkin layer and buttery, crunchy topping, it’s the kind of dessert that instantly brings back memories of family, laughter, and way too much food. It’s one of those treats that makes every gathering feel a little warmer and a lot more special.

Aunty Judy's Pumpkin Crunch

Ingredients

  • 1 cup sugar
  • 1 teaspoon cinammon
  • 1 large can pumpkin
  • 3 eggs
  • 1 large can Carnation evaporated milk
  • 1 box yellow cake mix
  • 2 blocks melted butter or margarine

Directions

  1. Preheat oven to 350 °F.
  2. Mix sugar, cinnamon, pumpkin, eggs, and evaporated milk together in a large bowl.
  3. Pour in greased 9" x 13" pan.
  4.  Sprinkle cake mix on top of mixture.
  5. Pour butter over cake mix as final topping.
  6. Bake for 45 minutes to an hour at 350 °F.
  7. Refrigerate leftovers.
